The main objective of the Akura project is to consolidate the technical viability of a sustainable process for cultivating and fattening mullets until they reach one kilogram in weight.
It is also planned to extract smaller sized sub-batches during the fattening process to evaluate their quality through sensory analysis and to carry out product acceptance studies.
